Cannelloni Rossini

Water - salt - oil - pasta dough for cannelloni - chicken breast - 150 g cooked ham - pâté de foie - 1 cup creamy white sauce to cover the cannelloni - grated cheese - melted butter

  • Cook the pasta dough for the cannelloni in plenty of water, salt and oil.
  • Drain the cannelloni, put them in cold water and then strain them in a colander.
  • Cut up the chicken breast and the cooked ham into small pieces, add the pâté de foie and the white sauce.
  • Salt and add the grated cheese.
  • Share out the mixture on the pieces of dough and wrap the dough round the filling.
  • Grease a baking dish with butter, put the cannelloni in, pour the white sauce over them, sprinkle the grated cheese on top, add a few pats of butter and pop into a hot oven to cook au gratin.

When Rossini paid a visit to Beethoven, the latter told him:
